Potato Pancakes

Hello everyone.
I'm back from the land of the living.... wait...

Life is busy. Right now, I'm getting ready for a wedding, sewing bridesmaid dresses, getting ready for a dance recital, (not to mention all the little in between things..) and hardly being able to wait for a trip to the beach!!
In the mean time, I have plans floating around in my head for projects and parties and 'what nots'... Hopefully one day I'll be able to post more things on here. "'But... c'est la vie.' As the Romans say." Ha Ha!
It seems like everyday I think of, AT THE LEAST, 2 or 3 things that I should make or sew or who knows what!? And if you add it all together.... it's scary...
Aimee doesn't think it's as scary as me.... whatever that means.
I just turned 18!! Yikes! I think Ive been told at least 12 times in the last week: "Now you can be tried as an adult!" --yeah, thanks.

Oh yeah, Potato Pancakes... Aimee has been bugging me to post something about the potato pancakes that I made. So, here they are.

The stage before they look like something you can eat...

Not very appetizing...
Fry 'em up...
Serve with sour cream or apple sauce.

Mm, mm good!

Yay! Finally an update from the Spinsters!!! I was actually popping on here to yell at you to get another post up... but you already did! LOL Ahem, yeah...

anyways.

Happy Birthday girly!!! It's so hard to believe you're so old now. I remember when we first met you and you were so little! We were going through pics just yesterday (I'm sending some to you) and it reminded me just how long we've known you!

Those pancakes look delicious! Do we get the recipe? *hint, hint*

Yes (Sarah), we have known eachother so long!!The other day I was just thinking about the time we reenacted the "drowning scene" from Anne of Green Gables! What fun we had! *smiles*

As for our Valentines date...
It, unfortunately, got cancelled. We had too much stuff to do that week. (lame, I know.)
But, 'WE SHALL PREVAIL!!'
Anyway, Valentines day was really just an excuse. We'll find a time. =]

And YES! I will post the recipe for the potato pancakes!
The reason I didn't (I meant to put my reason in the post but forgot..) Is that I had to make a couple changes when I made them and I forgot to write them down! DOH! So I will have to make them again and then I'll put the recipe on here! Sorry about that!

Wow, my dear, you don't sound like you have enough to do to keep you busy like me! I can't believe you are 18! Wow, years have gone by. I can't believe I will be 18 too.:) I am excited about voting this year. Are you? Or is the last thing you thought about.hehe

I want to do something together soon, but I have been SO stickin busy! One problem about turning 18... preparing for college!
I am taking classes up at COCCO preparing for the GED. I am getting closer. Math is not a friend of mine.:)
I have been doing classes up at COCCO and babysitting a bunch!
So, ya, that is pretty much the scoop for me.;)

O, my goodness!!! I have to tell you girls this. I passed my GED prep class to take the actual GED test!!! I have to wait for the next testing in April. I am SO totally stoked! Whoa! I'll let you know the date that I take it.:) Love you lovely ladies!
